This is approximately what each split side should contain, but there may be some variation depending on weight. All meat wrapped in one year rated locker paper and labeled with meat cut, weight and date cut. There will be a 45 percent cuffing and trim loss, which should give a finished product costing about $3.62 per pound in your freezer.
Assuming 800 lb dress weight
¼ split side of beef or 200 lb
200 lb @ $1.99 = $398 (this is the weight before cuffing)
$1.99 per lb includes cuffing and wrapping
Standard Cut List:
- 2 - boneless chuck pot roast, 3 lb each
- 7 - rib steaks, 1 inch thick or a rib roast
- 1 - 3 lb should clod pot roast
- 2 - packages short ribs 5 per package
- 2 - T-bone steaks 1 inch thick
- 5 - Porterhouse steaks 1 inch thick
- 4 - Sirloin steaks 1 inch thick
- 1 or 2 - Top round London broil
- 1 - Top round roast 3 lb
- 1 - Bottom round 4 lb
- 1 - Eye round roast 2.5 lb
- 4 - Sirloin- tip steaks, 1 inch thick
- 6- lb stew beef
- 20 to 25 lb's ground beef (85 percent lean)
